VIETNAMESE MUSHROOM SPRING ROLLS Filled with red pepper, bean sprouts, carrots, mushrooms, ginger wrapped in oriental wraps, fried and when dipped into the MFK brewed Thai Sweet Chili Sauce dip, it is a winner every time. Even with non-vegans! I have had clients want the rolls, because they enjoy the dip so much.
As they moved from being a seasonal and festival food to being a part of upper-class and middle-class quality foods, they became part of Dim Sum, the Chinese meal served as a series of small dishes, selected a la carte.
In the United States, the term egg roll is usually applied to the deep-fried item, and spring rolls are either served fresh, lightly steamed, or perhaps pan fried. In general, if the roll itself is not deep fried, the ingredients are cooked before wrapping.
HOW THE VIETNAMESE DO IT:
The Vietnamese interpretation of spring roll, is what spring roll should be. The fillings can be made of ground pork, shrimp, crab meat, with shredded carrots, mung bean noodles (cellophane noodles/glass noodles), etc., and the end result is utterly delicious and tantalizing. The deep-fried, crunchy, and golden brown exterior is just another plus.
The most refreshing part about Vietnamese spring rolls (cha gio) is that they can be served with fresh herbs and lettuce leaves. Eat them as is, of course, with nuoc cham (Vietnamese dipping sauce), or wrap your cha gio with fresh lettuce leaves and other aromatic herbs such as mint leaves (my favorite). Either way, they are deeply satisfying!

Fryer 170 deg
Remove from outer packaging
Place within pre-heated deep fryer for 8-10 minutes.
Keep product refrigerated. Store at or below -2 degrees but not below -10 degrees. The shelf life for this product before opening is 3 months. After opening, reseal the package carefully and keep them refrigerated. Consume the product within 10 to 14 days.
